This Eggroll in a Bowl is an easy and delicious spin on a classic. Serve over rice or add noodles for a complete meal.
Ingredients
- 1 pound 96/4 lean ground turkey
- 200 g sweet onion, chopped
- 150 g carrots, julienned
- 3 g minced ginger
- 3 cloves garlic, minced
- 60 ml chicken broth
- 500 g shredded cabbage
- 28 g reduced sodium soy sauce
- 7 g rice vinegar
- 4 g toasted sesame oil
- Salt, to taste
- Pepper, to taste
- Green onions, chopped
- Rice or ramen noodles (optional)
Preparation
- Preheat your pan over medium heat. Cook the lean ground turkey until browned. Add the sweet onions and cook with the meat until they start to soften.
- Add the carrots, garlic, ginger, and chicken broth. Sauté for a few minutes.
- Add the shredded cabbage, cover the pan, and let it soften to make it easier to mix with the rest of the ingredients.
- Stir in the soy sauce, rice vinegar, sesame oil, salt, and black pepper. Mix for another minute or two until well combined.
- Add the green onions and optional bang bang sauce.
- Serve over rice or ramen noodles. Optionally, top with a fried egg.
