Soba noodles in a sweet and delicious ginger and scallion sauce. Perfect with shrimp or any protein.
Sauce
- 9 oz soba noodles
- 2 Tbsp sesame seeds, lightly toasted
- 1Β½ cups finely chopped scallions
- 2 Tbsp minced ginger
- ΒΌ cup chopped cilantro
- 2 Tbsp grape seed oil (or any neutral oil)
- 2 tsp chili oil
- 1 Tbsp soy sauce
- 2 Tbsp rice wine vinegar
- 2 Tbsp honey
- 1 tsp salt
- 1 tsp black pepper
Optional toppings
- Thinly julienned cucumber
- Lime wedges
Preparation
- In a bowl, mix all the ingredients for the Sweet Ginger Scallion Sauce. Check for seasoning and let it sit for 10-15 minutes to allow the flavors to develop.
- Boil the soba noodles according to the package instructions. If serving cold, drain and rinse under cold water. If serving hot, simply drain.
- Add the sauce and sesame seeds to the noodles, tossing well to combine. Adjust seasoning if needed.
- If desired, sprinkle with lime juice and add julienned cucumber for extra freshness. Give a final toss and enjoy!
