Soba Noodles with Ginger & Scallion Sauce

Soba noodles in a sweet and delicious ginger and scallion sauce. Perfect with shrimp or any protein.

Sauce

  • 9 oz soba noodles
  • 2 Tbsp sesame seeds, lightly toasted
  • 1Β½ cups finely chopped scallions
  • 2 Tbsp minced ginger
  • ΒΌ cup chopped cilantro
  • 2 Tbsp grape seed oil (or any neutral oil)
  • 2 tsp chili oil
  • 1 Tbsp soy sauce
  • 2 Tbsp rice wine vinegar
  • 2 Tbsp honey
  • 1 tsp salt
  • 1 tsp black pepper

Optional toppings

  • Thinly julienned cucumber
  • Lime wedges

Preparation

  1. In a bowl, mix all the ingredients for the Sweet Ginger Scallion Sauce. Check for seasoning and let it sit for 10-15 minutes to allow the flavors to develop.
  2. Boil the soba noodles according to the package instructions. If serving cold, drain and rinse under cold water. If serving hot, simply drain.
  3. Add the sauce and sesame seeds to the noodles, tossing well to combine. Adjust seasoning if needed.
  4. If desired, sprinkle with lime juice and add julienned cucumber for extra freshness. Give a final toss and enjoy!
