Healthy turkey chili made with lean ground turkey, kidney beans, and corn.
Ingredients
- 2 tsp olive oil
- 2 medium yellow onions, chopped
- 3 garlic cloves, minced
- 1 medium bell pepper, chopped
- 2 medium jalapeños, chopped
- 1 lb lean ground turkey
- 4 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp dried oregano
- ¼ tsp cayenne pepper
- ½ tsp salt, plus more to taste
- 1 (28 oz) can diced tomatoes
- 1¼ cups chicken broth
- 1 (15 oz) can dark red kidney beans
- 1 (15 oz) can pinto beans
- 1 (15 oz) can corn
Preparation
- Heat olive oil in a large pot over medium-high heat. Add onions, garlic, and bell pepper, sautéing for 5-7 minutes until softened.
- Add ground turkey and cook until browned. Stir in chili powder, cumin, oregano, cayenne, and salt, cooking for an additional 20 seconds.
- Add diced tomatoes, chicken broth, kidney beans, and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes, until chili thickens.
- Taste and adjust seasonings as needed. Garnish as desired.
- Makes 6 servings (about 1 ½ cups each).
