Healthy Turkey Chili

Healthy turkey chili made with lean ground turkey, kidney beans, and corn.

Ingredients

  • 2 tsp olive oil
  • 2 medium yellow onions, chopped
  • 3 garlic cloves, minced
  • 1 medium bell pepper, chopped
  • 2 medium jalapeños, chopped
  • 1 lb lean ground turkey
  • 4 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • ¼ tsp cayenne pepper
  • ½ tsp salt, plus more to taste
  • 1 (28 oz) can diced tomatoes
  • 1¼ cups chicken broth
  • 1 (15 oz) can dark red kidney beans
  • 1 (15 oz) can pinto beans
  • 1 (15 oz) can corn

Preparation

  1. Heat olive oil in a large pot over medium-high heat. Add onions, garlic, and bell pepper, sautéing for 5-7 minutes until softened.
  2. Add ground turkey and cook until browned. Stir in chili powder, cumin, oregano, cayenne, and salt, cooking for an additional 20 seconds.
  3. Add diced tomatoes, chicken broth, kidney beans, and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes, until chili thickens.
  4. Taste and adjust seasonings as needed. Garnish as desired.
  5. Makes 6 servings (about 1 ½ cups each).
